Here are some recipes for vegetarian dishes à la Pikkunuppu.

Beans de Luxe
600 g green beans
50 g butter
2 tbsp wheat flour
1 tsp herb salt
1 tbsp sugar
2 onions cut small
some cloves of garlic cut small
2 dl sour cream
3-4 crackers
3 dl grated cheese

Steam or boil the beans for about 10-15 minutes.

Melt the butter in a pan, add the flour and fry for a moment. Remove the pan from the heat and add herb salt, sugar, onion, garlic and sour cream.

Strain the beans and cut them to 5cm long pieces. Mix into the pan.

Put the mixture into an oven dish. Crush crackers and cover the mixture with them. Spread the grated cheese on top.

Bake in 200 degrees Celsius for 30 minutes.

Serve for example with oven vegetables.


Carrot cake
3 dl oil
4dl sugar
2 eggs
8-10 dl finely grated carrots
7-9 dl wheat flour
1 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1 tsp vanilla sugar

5 dl powder sugar
50 g butter (in room temperature)
drop of water

Mix oil, sugar and eggs into creamy paste. Add grated carrots. Mix dry ingredients and add them into the dough. Pour the dough into a baking mold or a deap oven tray covered with baking paper. Bake at 180 degrees Celsius for about 35 minutes.

Let the cake cool down. Mix the ingredients for the frosting into a thick, smooth paste, and spread over the cake.
